Glutamate is an important building block commonly found in proteins. Glutamate, an amino acid found in the structure of all proteins, is found naturally in cheese, milk, tomatoes, mushrooms, meat, fish and most vegetables.

The use of glutamate as a flavor enhancer has a long history. Because of its unique taste, it is also called "umami", which means "delicious" in Japanese. Umami has been accepted as the 5th taste in addition to the basic four taste senses (bitter, sour, sweet, salty). Today, MSG is obtained through natural fermentation, which has been used for centuries in the production of foods such as vinegar and yoghurt.
